Honey Dude
Honey Dude is a coffee we’ve been sourcing from Hacienda Pillcocaja in Ecuador for the past four years. A natural Typica that’s clean and delicate, with honeydew, cookies and maple syrup. Easy-going, but with some character.
FROM ORIGIN TO CUP
Honey Dude comes from Hacienda Pillcocaja in Azuay, Ecuador, where we’ve been working directly with the Crespo family for the past four years. It’s a natural Typica, fermented for 18 hours and dried on African beds under 70 percent shade for 12 days. The cup is clean and delicate, with honeydew, dark berries and a creamy mouthfeel.

Origin
The Crespo family produces Honey Dude at Hacienda Pillcocaja in Azuay, Ecuador, at 1700 masl. Their wet mill sits just 800 metres from the farm, keeping the processing close to where the coffee is grown.

Varietal
Typica, one of the oldest cultivated Arabica varieties and one we’ve been sourcing from Hacienda Pillcocaja for several years. Here, we find a delicate expression with good clarity, soft fruit and a creamy texture.

Processing
Natural. The coffee is fermented for 18 hours before drying on African beds under 70 percent shade for 12 days. Despite being a natural, the profile stays remarkably clean and delicate.

Intervention level
Low. This is a traditional natural with a short fermentation followed by carefully managed drying. There are no additional processing stages, keeping the intervention relatively simple.
